Study of Seasonal Variations on Manufacturing, Processing, Procurement, Supply and Pattern of Distribution of Milk and Milk Products at Kanpur

Abstract

The relevant informations about present investigation which were collected on milk procurement, processing, manufacturing and supply of milk and milk products during 2013-14 by PCDF, Juhai, Nirala Nagar,Barra, Kanpur, which is located in cental Uttar Pradesh Kanpur zone. On the basis of weather factors e.g. temperature and humidity in year 2013- 14, relevant year divided in to four season and every season consist equal three months. Investigated data were analyzed by using Complete Randomized Design. It was observed total and season wise range of milk procured was 341837.387 and 191810.925 to 20724.299 mt. ton in season III and II, respectively. The total production of Full Cream Milk, Standard Milk, Toned Milk, Double Toned Milk, JANT A Milk, and Loose Milk were 8621402.25, 71793, 64473, 29403, 72198 and 1855296.811 I. respectively. The highest full cream milk, standard milk, and loose milk was processed in season IV, and toned milk and double toned milk in season III, However, highest JANTA milk was processed in season II. The total milk products manufactured during 2013-14 were as Salted Lassi (17801.25 I.), Milk cream (23439.75 I.), Khoya (27532.875 kg.), D~hi (89264.265 kg.), Chhena Kheer (2599.755 kg.), and Chhach (423134.5 I.). The highest milk products were manufactured in various season is Salted lassi, Milk cream, Dahi, Chhena kheer and Chhachh in season II, and Khoya in season I. The total Milk Supply to various agencies were recorded as Military Dairy Farm (927390 I.), Kanpur City (1960410 I.), Etawah (1038187.5 1.), Farukkhabad (97859.25 I.), Unnao (649304.824 I.), and Agra (581721 1.), respectively. The analyzed of variance shows that significances differences among seasons were observed in Processed Toned milk, JANT A milk Manufactured Salted lassi, Chhena kheer, Chhachh, and Supply in Military Dairy Farm and Etawah.
