dc.description.abstractCookies are mainly ~cr\'Cd with beverages like tea, coffee. drinks etc. A cookie, or a btscuiL IS a baked or cooked product that is typically small. Oat and sweet. TI1e mahua flower is edible and is a food item for tribals. They use it to make syrup lbr medicinal purposes. Mahua flowers are rich in total sugars. out of which reducing sugar arc present in hig)l amount. The flowers are also fermented to produce the alcoholic drink mahua. a country liquor. The objective of this report is to see the differences between control cookies and mahua enriched cookies. Many people are suffering from heart and diabetes. These cookies are a good option for them as they contain natural sweetness in mahua. The pH value is decreasing in controlled and mahua sample. The titrablc acidity of controlled and mahua cookies is slig)ltl) increasing from 0 to 90 days. Colour and texrure slightly kept on decreasing. But the cookies which arc blended with mahua are more acceptable than the traditional control sample. They arc not only nutritious but also rich in taste. so they arc accepted by all whether child ren or adults.
