Abstract
Biochemical Parameters as affected by different nitrogen trealments in potato" a laboratory experiment
was carried out to know the concentration of reducing sugar, starch and vitamin c in given variety of
potato from Ludhiana. Glucose and fructose are the major monosaccharide sugars in potato. it is
concentralion varies between 0.15-1.5%. 60-80% dry matter of potato is starch is present in !he fonn of
amylopectin. This variability is primarily the result of genotype and growing environment. In addition to
starch potaloes are rich in vitamin c (ascorbic acid), \\hich is an antio10dant. Po«atoes were considered
life-saving food source in early times because of the ascorbic acid present in this. Whereas, different
sugars level in tubers showed inconsistent behaviour \\ith varying nitrogen doses. The treaonent no. 8
found superior to other tested cultivars for maintaining !heir biochemical quality during storage. The
objective of this experiment was to analyse the effect of different nitrogen levels on biochemical
property of potato tubers. The experiment was carried out at lhe Ccnlral potato research institute
Modipuram Meerut of lhe deparlment of biochemistry during rabi season of 2022-2023. In our
experiment maximum dry matter is sho"'n in trealment D and initial treatments Tl, 1'2, T4, T6 and 17,
T8, Tl 0 gave alm051 equal amount of dry matter and the lo\\est dry matter found in trealment T5 and
1'9. The reducing sugars was found minimum in TJ (485.91 m!VIOO g FW) and trealments 1'2, D, T4
have approximately equal amount of reducing sugar (564.56, 547.8, 585.25 m!VIOO) respectively and
some treatments T5, T6, 17, Tl 0. T8 and T9 bave maximum reducing sugar values (n6.51, 79415,
79715,724.54,859.09,842.33). Siarch variability is shown in treatment TIO, T9 and T8 highest and the
initial trealments like Tl, T2 AND D have the least value of starch while treabnents TS and T6 ha~c
average siarch values. In our experiment content of vitamin c decreased in the following order:
T5(23.51), T1(22.41) AND T2(20.54)> (T4(J9.86), D(21.46), 1'9(14.83) and
Tl 0(14.38)>T8(7 .3)>T6(4.56) m!VI00g.
